Century Egg is taken from my zine 'Odd Egg Out', detailing unusual and versatile egg recipes around the world. Some recipes are local delicacies while others are everyday staples. Century eggs derive from the Ming Dynasty in China, where people would preserve chicken or duck eggs in a mixture of salt, lime, and ash and roll them in rice husks to prevent them from sticking together.
